Our Cheese’s, Cured meats and many other open food products require special preparation and handling and whilst we can guarantee our processes are robust, we must point out that products are prepared in a working kitchen environment where Gluten, Nuts, Seeds, and unpasteurised products are present.
Manchego is a Ewes milk cheese, produced from the La Mancha region of Spain. It holds PDO status (Protected Designation of Origin) meaning that to be called Manchego it must be produced in the provinces of Albacete, Ciudad Real, Cuenca, and Toledo. It can only be made from whole milk of the manchega breed of sheep and it must be aged for a minimum of 60 days and maximum of 2 years.
Historically the cheese was produced in grass baskets which gave the cheese its distinctive zig zag pattern – this is now re-created by specifically designed mould which imprints the same effect.
The Cheese has a firm texture and white to ivory in colour. Its initial taste is buttery due to the whole milk used whilst the aftertaste has a slight sharpness you would expect from a ewes cheese. Fantastic as a tapas accompaniment, even better with something sweet like a chilli jam.
Mature Spanish reds especially Rioja and Valdepeñas (the latter comes from the same region as Manchego, La Mancha). Other oak-aged tempranillos too
